生香蕉止瀉 vs 熟香蕉通便
你喜歡吃生香蕉還是熟香蕉?原來除口感與味道不同外,從中醫角度來看,香蕉成熟程度會影響其屬性,生香蕉外皮呈黃綠色,屬性偏寒涼,能清熱解毒,亦有收歛功效,有助止瀉,唯脾胃虛寒人士不宜服用;已出梅花點或經烹煮的熟香蕉,寒涼程度相對減低,由於有潤腸通便作用,腹瀉患者應少食為妙。
除了常見的香蕉,坊間亦有大蕉 (Plantain),別名芭蕉、煮食蕉,大蕉體型比香蕉短小但粗壯,由於含豐富澱粉質且甜度低,較適合煮食用途,大蕉屬性與香蕉相若,性涼,有潤腸通便作用。
生香蕉 — 屬性寒涼,有清熱解毒及治痔瘡的功效,適合熱氣人士使用。要注意尚青或沒熟透的香蕉有收斂作用,能止瀉更有可能引致便秘,不宜多吃。
熟香蕉或經烹煮的香蕉 — 寒性會減低,帶潤腸通便的效果,最好是香蕉皮上呈現梅花點。

Unripe vs Ripe bananas
Do you like to eat ripe or unripe bananas? Besides the differences in taste and texture, from the perspective of Chinese Medicine, the level of ripeness would also determine the nature of the fruit.
Unripe bananas are yellowish green in color. They are cool in nature, can dissipate heat and clear toxins from the body, and relieve diarrhea. They are, however, not suitable for individuals with a weak spleen and stomach.
Ripe bananas with spots on the skin or cooked bananas are less cool in nature, and they can enhance bowel movements. However, individuals with diarrhea problem should avoid eating.
Besides the regular bananas in the market, there are also another type called plantains, also known as the cooking bananas. They are thicker but shorter than the regular ones and are high in carbohydrates but not as sweet, making them a suitable ingredient for cooking. Like regular bananas, plantains are cool in nature, and they can promote bowel movements too.
Unripe bananas - cold in nature, clears heat, removes toxins and can treat hemorrhoids. Suitable for those who are hot in nature. Note that green and unripe bananas can also relieve diarrhea or lead to constipation so should be consumed in moderation.
Ripe or cooked bananas - cold nature is reduced, moistens the bowels to relieve constipation. The ideal ripe bananas would have small brown spots on the skin.

汗臭 vs 狐臭
夏天天氣異常酷熱,在室外待上數分鐘已大汗淋漓,公共交通工具、餐廳、辦公室、電梯都難免瀰漫着汗水味,更怕遇上氣味異常濃烈刺鼻的狐臭。狐臭與汗臭不同,狐臭只出現在腋下位置,就算不出汗也可能散發臭味,洗澡亦不易將之消除。中醫理論認為除先天性遺傳外,後天飲食不節形成濕熱體質亦是狐臭主因,濕熱體質人士體味特別濃烈,多伴隨面油多、容易出暗瘡、無胃口、口苦、身體困倦、小便偏黃量少等症狀。治本方法為改善體質,每天飲用米水,適量飲用清熱祛濕茶療,少吃熱性食物、肉類、煎炸油膩、辛辣、咖喱等重口味食物,啤酒、奶茶、咖啡也不宜飲用。
除臭茶療
功效:清熱除煩、生津利尿,紓緩體臭症狀。
材料:淡竹葉9克、土茯苓15克、綠茶1茶匙
做法:將材料洗淨放保溫瓶,以熱開水沖洗一遍,再注入熱開水焗10分鐘即可。此茶能反覆沖泡至味淡,建議一星期飲用2-3天,兩星期為一個療程。
注意:脾胃虛弱及容易腹瀉人士不宜多飲。

Sweaty smell VS smelly armpits
The weather during summer is exceptionally hot, and such a weather causes us to sweat profusely even when we are just outdoors for a few minutes. Whether we are in a public transport, restaurant, office, or elevator, sweaty smells might linger in these enclosed spaces.
Nevertheless, sweaty smell is still considerably bearable as compared to smelly armpits. As the name suggests, the unpleasant body smell comes from the armpits. They would still smell even when the person is not sweating, and it is difficult to get rid of the bad odor even after shower.
Chinese Medicine theories believe that besides hereditary factors, bad dietary leads to damp heat accumulation in the body. This is how a person develops smelly armpits. Individuals with the damp heat body constitution tend to give out a stronger odor. Other symptoms include oily face, acnes, appetite loss, bitter taste in the mouth, fatigue, and yellowish urine that often comes in a small quantity.
The best way to get rid of smelly armpits is to improve the body constitution. Drink rice daily and consume an appropriate amount of herbal tea to dispel dampness from the body. Cut down on meat, fried and greasy foods, as well as spicy and strong flavored foods like curry, and foods that are hot in nature. Also, avoid drinking beer, milk tea, and coffee.
Tea to relieve odor
Effects: Clears heat and relieves irritability. Promotes fluid production. Relieves symptoms of body odor.
Ingredients: 9g lophatherum, 15g smilax, 1 teaspoon green tea
Preparation: Rinse all ingredients thoroughly and place into thermos, rinse with hot water once. Then add in hot water again to steep for 10 minutes. This tea can be re-brewed until its flavor weakens. For best results, drink weekly for 2-3 days. Two weeks for a treatment.
Note: not suitable for those with a weak stomach or prone to loose stool.

曬後消暑椰青湯
夏天陽光異常猛烈,長時間進行戶外活動或工作,有機會出現頭暈、頭痛、胸悶、口乾、疲倦甚至眼前一黑等不適症狀,從中醫角度來看是因為身體感受了暑熱之邪,一時間未能散走熱氣所致,除了出現實熱症狀,曬後皮膚亦會變得乾燥及暗啞,宜飲用有消暑作用的湯水,為身體及肌膚補充水份。冬瓜、老黃瓜、哈密瓜、節瓜等都是適合煲湯用的消暑好瓜,簡單配搭綠豆、赤小豆、白扁豆、眉豆等有祛濕功效的豆類,就可以為身體清暑祛濕。
食材小貼士:
粟米性平,具益肺寧心、健脾開胃、健腦等作用。粟米衣可清熱解毒;粟米鬚有祛濕消腫、利尿的功效;粟米芯能健脾利尿、消滯、祛濕。
冬瓜粟米白扁豆椰青湯
功效:清熱利水滲濕,紓緩口氣、腳氣、小便偏黃、口苦口乾等身體偏熱症狀。
材料:冬瓜連皮約500克、粟米(連鬚連芯)2根、白扁豆30克、赤小豆30克、腰果30克、椰青2個
做法:
1. 所有材料洗淨,冬瓜連皮連籽切塊;粟米連鬚連芯切大塊;椰青砍開,倒出椰青水備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。

Green coconut soup to relieve summer heat
The sun during summer can be harsh especially when we stay outdoor for work or sports. We might experience a headache, chest tightness, dizziness, dry mouth, fatigue, and even blackout.
From the perspective of Chinese Medicine, these symptoms develop due to the invasion of summer heat pathogens when the body fails to eliminate the heat timely. Besides developing heat-related symptoms, tanned skin would become dry and lose its complexion.
It is best to consume soup that can clear the summer heat and hydrate the body and the skin. Winter melon, old cucumber, cantaloupe, and hairy gourd are among the best gourds and melons to make soup. Boil them together with mung beans, rice beans, white lentils, and black-eyed peas, as these beans can dispel dampness from the body.
Tips on ingredient:
Corn is mild in nature. It is beneficial to the lungs, calms the mind, strengthens the spleen to stimulate appetite, and is good for the brain. Corn husks can clear heat and detoxify. Corn silk can clear heat and promote diuresis, lower blood sugar. Corn core can promote diuresis, relieves stagnation and dispel dampness.
Winter melon and corn soup with green coconut
Effects: Clears heat, promotes diuresis and dispels dampness. Alleviates bad breath, athlete’s foot symptoms, yellowish urine, and bitter or dry mouth.
Ingredients: 500g winter melon(including skin), 2 ears of corn(including silk and pith), 30g hyacinth beans, 30g rice beans, 30g cashew nuts, 2 green coconuts
Preparation:
1. Rinse all ingredients thoroughly. Cut winter melon (with the skin) into large chunks. Cut corn (with silk and pith) into large chunks. Cut the green coconut and pour out the coconut water and set aside.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

IMPORTANT TIPS:
- Consume between ½ tsp. – 2 tsps. of matcha a day.
- Although matcha is low in caffeine, it still contains caffeine, so avoid drinking in the evening.
- Good quality matcha is bright, vivid green and will have a fine powdery consistency. Avoid anything that’s yellowish or coarse. It won’t tast good.
- The highest quality matcha comes from Japan and it will cost more than green tea.
- If you want to gain the maximum benefits, only drink matcha with water or low protein liquids such as coconut milk, rice milk or almond milk, NOT dairy milk. Dairy milk will actually counteract the adsorption of many of the beneficial nutrients and antioxidants in Matcha. So you’re just wasting it.

Từ cái duyên tình cờ, thì người đầu bếp nghĩ đến việc biến món xôi chiên phồng trở thành món ăn chính của quán. Ông không để hạt nếp nguyên vẹn như làm xôi thông thường, mà ông quết chúng mịn hơn, trong nếp ông còn pha thêm ít đường cho có vị ngọt, bột sau trộn được ngâm trong dầu ăn.
Muốn làm được chiếc bánh ngon cần phải chọn nếp ngon. Nếp ngon là nếp dẻo. Tuy nhiên khó hơn cả là nghệ thuật chiên xôi. Xôi phồng như quả bóng thích mắt, miếng xôi mỏng, giòn, ăn bùi và dẻo dẻo rất hay.

There were a number of food stalls selling fried sticky rice cakes in Dong Nai in the year 1952. This stunning dish has become very popular throughout the southern provinces of Vietnam because it is acceptable in all regions as a kind of snack that is easy to eat and easy to make.
